A lovely alternative to eating vegetarian curries during this fasting period. Booming with taste and very quick to make. A must try for all enduring the fast this month.
1 pkt coloured pasta screws, boiled until ready with a little salt to taste.
2 tablespoon margarine
2 teaspoon dried thyme
1 onion chopped
2 trays / punnets mushrooms cleaned and halved
1 yellow,1 green, 1 red pepper sliced
300 – 500g mixed vegetable
Salt and pepper for taste
500ml plain yoghurt.
Sauté onion, thyme and mushrooms in margarine.
Add peppers and mixed vegetable and allow to cook for 7 minutes and until dry.
Add salt, pepper, pasta and yoghurt.
